I will do anything to help my toddler eat real food and nutrient dense meals,

 and boy! has he made me work hard to achieve that.

He has always loved the staple paleo pikelets: one banana: two eggs. So I’ve been experimenting with adding in more nutrients.

Today and past weeks I have been making these, and they have been a winner every time!

Taking photos at nighttime is not always the best, but you get the idea. They’re pikelets.

CARROT and PEPITA PALEO PIKELETS

Ingredients:

1 carrot, chopped

1/2 tsp vanilla powder

1/2 cup pepitas

1 tsp cinnamon

1 banana

2 organic eggs

1-2 Tbsp oats (optional)

Method:

In the thermomix (high powered blender), mill the pepitas (and oats if using) with the cinnamon and vanilla powder until a flour like consistency. 15sec/sp6

Then add in carrot and blitz 5sec/sp6 until desired consistency is reached.

Add in remaining ingredients and mix  5sec/sp4 (or whisk).

Then cook in ghee how you make regular pikelets. We use this animal pikelet maker we picked up from Big W a long time ago.

Alternative combos: Cauliflower choc chip, sweet potato, pumpkin and nutmeg.
